Pappardelle in Saffron Cream

My mom gifted me with a container of saffron and I am trying to use it in the most responsible way. Saffron is so valuable and so freaking expensive so this is only the second recipe I have used it in the about 5 months of having it. I bought saffron noodles from Ohio City Pasta, which if you’re in the Akron/Cleveland area please check them out, and figured they would be perfect to pair with a saffron cream sauce. This recipe is so decadent and delicious, I am so proud of how this turned out and omg I want to eat it all the time now.

Ingredients

  • 1 TBSP Unsalted Butter
  • 1/2 Small Shallot, minced
  • Pinch of Saffron threads
  • 2/3 Cup Heavy Cream
  • 1/4 TSP Fresh Lemon Juice
  • 1/4 TSP Vanilla Extract
  • 4 oz Saffron Pasta/or Pappardelle
  • 2 TBSP Grated Parmesan Cheese
  • 2 TBSP Roughly Chopped Chives
  • 1/2 TSP Grated Lemon Zest
  • Salt + Pepper

Let’s Get Cooking

Salt water & bring to a boil, cook the pasta per directions, slightly under al dente so it can finish cooking in the sauce. Remove 1/4 Cup of the pasta water to save.

Melt butter in a large skillet over MED heat. Add in the shallot & saffron and cook until the shallot is softened. Add in the cream + 1/4 TSP salt + pepper to taste. Increase the heat to MED-HIGH and let the sauce thicken and simmer. Stir in the lemon juice + vanilla.

Transfer the cooked pasta to the sauce + the 1/4 Cup pasta water. Stir in the parmesan + chives.

Transfer into a bowl & top with lemon zest and a few more chives.

Restaurant Favorites – CLEVELAND

COVID is slowing down, vaccines are making their way to the general population, which means it’s time to get back to restaurants in-person. Take away was a great adaptation to the circumstances that we were in, but it’s not the same as dining in person. I’ve been slowly making my way through my Yelp EATSlist, here are a few of my favs I’ve visited in Cleveland, OH.

Thyme Table

Thyme Table is a small restaurant located in Bay Village, OHIO. The restaurant is cozily decorated and provides a perfect vibe for you to sit down with your friends and family and enjoy a delicious meal. I visited to have dinner with family and friends for my 25th birthday. I made a reservation easily though the RESY app and everything was smooth sailing. The menu was small, which I personally love, it means that there are few meals that are all made excellently. We started with asking the server her preference on wine based on our taste, and she was able to pick out two bottles, one dry and one sweet red that were delicious. We started out with chips and dip and the lobster tots. They were both so delicious, I could have put the onion dip on everything. For meals there was something for everyone, burgers, chicken sandwiches, pasta, and short ribs. Picky eaters are definitely welcome. The general manager came to check on us after the meal was over. It appeared to me that he was genuinely interested in how the meal and our experience was, which I appreciated. I would return for sure!

Avo Modern Mexican

One of the newer restaurants in Ohio City that a lot of people are talking about is, Avo Modern Mexican. I’ve gone twice now and I would make it a regular spot if I lived closer. When I returned the second time I server recognized our party, which makes you feel welcome. You have multiple different choices of guac, salsa, and margaritas that allows you to switch it up every time you visit. I also recommend the fundido, it is so cheesy and warm and delicious, you just have to order it. I recommend this place when you want to hang out with some friends and stay awhile. It does fill up though, so I recommend placing a reservation through their website or arriving before the dinner rush.

Heck’s Cafe

We all love brunch don’t we? If you are looking for another great lunch spot close to Ohio City, look no further than Heck’s Cafe. Stopped by to do some homework and grab some brunch, only to be completely charmed by the cinnamon coffee and the AM fries. I could write a book on how much I love these AM fries it is unhealthy. They are french fries, covered in a blue cheese sauce, topped with sunny-side up eggs. It should be known that I HATE blue cheese, I despise it. BUT THESE FRIES, OMG. The blue cheese adds this tang that is needed and just brings the whole thing together. I had the crab cake Benedict which was delicious as well. Everything was cooked so perfectly, it would be a crime not to return.

Cleveland Wing Crawl

Never have I ever participated in any type of bar crawl. I am a bad day drinker, if I start to get sleepy it’s all over. NOW a food crawl is my type of scene! This weekend, I participated in Cleveland’s Wing Crawl with a few friends after a night out for her birthday. 4 bars in the Ohio City area took part in this and let me just say if they ever do this again I will be attending because I could eat chicken wings for days.

Touch Supper Club

Our first stop, the super cozy Touch Supper Club. The atmosphere was so chill it was the perfect place to start. Here they offered 3 types of wings, however, the majority of us decided to go with the Korean BBQ. IT WAS DELICIOUS. Super sticky and smoky, it had great flavor. We rated a 6/10

The Old Angle Tavern

The next stop, they had the perfect set up. You walked right up to a window and they provided you with their sampler of wings! They had TV’s on, good music, and good conversation. They offered a buffalo basil [the crowd fav], a bbq, and a house dry rub. Overall, it was pretty great! We rated 7/10

Nano Brew

The final stop: Nano Brew. Now at this point we are a few drinks in, 12 wings in and we are ready to go. Nano also offered a few options, including Cajun-Ranch Dry Rub, Bourbon Orange Teriyaki, MGB Prosperity BBQ, Spicy Tai Chili [THE ABSOLUTE BEST]. We stayed so long because we had to order another round of the Spicy Tai Chili. Seriously, go there and try these wings. We rated 8/10

Market Garden Brewery

Our last stop, we were unable to make it due to the fact that we got too comfortable at Nano Brew. So I cannot comment on the wings, but in passing by, they looked delicious!
