“A Cheesus is Born” Burger

I am not a mushroom gal. However, sometimes we do things we don’t want to because we love someone. This would not have been my choice as our next burger, but I went with it since my mother and brother love mushrooms. This is your classic mushroom Swiss burger. The only thing that kept me from vetoing this burger altogether is that it is topped with brown gravy, because gravy makes everything better.

Ingredients

  • 3 cloves garlic, coarsely chopped
  • Butter or olive oil
  • 1 10-ounce package button mushrooms, sliced
  • 1 cup brown gravy (canned, homemade, or from a mix)
  • ¼ cup brown mustard
  • 1 pound ground beef
  • 2 Roma tomatoes, seeded and diced
  • 4 slices Baby Swiss cheese
  • 4 slices Jarlsberg cheese or Provolone
  • 4 buns
  • Boston or green leaf lettuce

Let’s Get Cooking

In a skillet, sauté the garlic in a little butter or oil over medium-high heat just until fragrant. Turn the heat down to medium and add the mushrooms and a bit more butter or oil. Cook these slowly to soften them up and draw out their liquids.

Once your mushrooms are starting to brown, raise the heat to high till the liquid evaporates. Throw in your diced tomatoes and sauté briefly. Set aside. Heat up your gravy and make sure that it is hot for plating.

Gently mix the mustard into the beef. Cook the patties as you normally would.

Put a bit of your mushroom-garlic-tomato mixture on top and then add one slice each of the Swiss and the Jarlsberg/Provolone Cheese.

Build your Burger: Bottom bun, lettuce, cheesy-mushroom burger, more mushrooms, gravy, top bun.

Make sure you use that extra gravy for your French fries!

“New Bacon-ings” Burger

The moment I built this burger I was singing the intro to the Krabby Patty in the Krusty Krab training video … DA DADUM DUM DUM DUM DAA. This right here is a classic burger – there’s no way you can fuck this up. I made a few changes when cooking this burger – like swapping cheddar for pepper jack and not making Bob’s fancy bacon fries because I was too tired. This burger is a good reminder that the classics are delicious for a reason.

Ingredients

  • 1 LB Bacon
  • 1 LB Ground Beef
  • 1 Cup Whole Milk
  • 1 Large Egg
  • 4 Buns
  • Green Leaf Lettuce
  • 1 Large Tomato, sliced
  • 1 Red Onion, sliced
  • 4 Slices of Cheddar Cheese [or Pepperjack]
  • Par-baked French Fries

Let’s Get Cooking

Preheat your oven to 400F.

Chop up all but 8 slices of bacon and fry over MED heat until almost crisp. Drain the chopped bacon on paper towels, wipe out the skillet, and fry the remaining slices until crisp.

Par-bake your french fries, or par-fry them and set aside.

Combine milk + egg in a large bowl. Coat the par-baked french fries in the mixture and spread on a parchment-lined baking sheet. Toss the coated fries with the chopped bacon and return to the oven for 10-15 minutes or until the fries are extra crispy.

While the fries are cooking, make 4 patties and season both sides with salt and pepper and cook to your doneness. When they’re just about finished cooking, top with your cheese slices.

To build your burger: bottom bun, lettuce, cheeseburger, tomato, bacon slices, onion, top bun.

Serve with your bacony fries & enjoy… you’re going to need to unhinge your jaw for this one.

“Pickle My Funny Bone” Burger

I am a pickle girl, as I am sure I have shared before, so of course I had to make this fried pickle burger by our BFF Bob. It is one of the more simple burgers that Mr. Belcher has to offer, with fried pickles and a spicy mayo being the stars of the show; but don’t let simple fool you, because DAMN it’s good.

Ingredients

  • Vegetable/Canola Oil for Frying
  • 1/3 Cup Flour
  • 1/3 Cup Cornmeal
  • 1 Egg
  • 1 TBSP Old Bay Seasoning
  • 1 TSP Crushed Red Pepper Flakes
  • 1 16 oz jar Kosher Dill Pickle Chips
  • 4 Hamburger Buns
  • 1/2 Cup Mayo
  • 1 TBSP Frank’s Red Hot
  • 1 TSP Ketchup
  • 1 lb Ground Beef
  • Green Leaf Lettuce

Let’s Get Cooking

In a deep saucepan, heat about an inch of oil to 350F.

Mix the flour + cornmeal + seasoning + red pepper flakes in a large bowl. In a small bowl, crack the egg and beat it.

Drain the pickle chips and pat dry. Dunk the pickles in the eggs and then dredge in the seasoned flour. Fry the coated pickle chips in small batches until they turn golden brown. Remove from the oil with a slotted spoon. Be sure to check the oil temperature between batches.

In a bowl, mix together mayo + hot sauce + ketchup, adjusting per your taste.

Form the beef into 4 patties, season both sides with salt + pepper, and cook to your liking.

To build the burger: bottom bun, lettuce, burger, fried pickles, spicy mayo, top bun.

“I’ve Created a Muenster” Burger

If you are feeling in a spooky mood this Halloween season this simple burger is a great way to celebrate! I am not a mushroom gal so no mushrooms for me on my burger, but my mom and brother loved them! This is another recipe from Bob’s burger recipe book and he still hasn’t failed me yet; and don’t forget the fries!

Ingredients

  • 1 10oz Package White Button Mushrooms, sliced
  • 2 TBSP Butter
  • 1 LB Ground Beef
  • 8 Thick Slices Muenster Cheese
  • 4 Buns
  • Green Leaf or Boston Lettuce
  • Ketchup

Let’s Get Cooking

Saute the mushrooms in the butter over MED-HIGH heat until they are limp and light brown

Form 4 patties and season both sides with salt and pepper. Cook the burgers to your preferred doneness, I always go for a Medium Rare, so about 6 min per side.

While the burgers are over the heat, put one slice of Muenster on each burger. Then pile on a scoop of mushrooms and then a second slice of Muenster to hold the mushrooms together. [If you’re like me and want no mushrooms, I still went for 2 slices of cheese, the more cheese the better!]

To build the burger: Bottom bun, lettuce, cheesy mushroom burger, a dash of ketchup, and top bun.

Happy Halloween, enjoy!

“Romaines of the Day Burger”

A Caesar salad with chicken and some french fries is a summer staple for me. That tangy Caesar dressing and those croutons are just so complimentary. Rather than croutons, grab some hamburger buns, and let’s turn this salad into a delicious burger. The best part is, with the leftover romaine and dressing you have, you can make your adored chicken Caesar salad with the leftovers! and yes, Caesar salad dressing is made with anchovies, so just get over it, you’ve been eating it this whole time anyways.

Ingredients

  • 1 2oz Tin or Jar Anchovies packed in water
  • 2 TSP Garlic, minced [I used 2 cloves]
  • 1 TSP Dijon Mustard
  • 1 TSP Worcestershire Sauce
  • 1 Cup Mayo
  • 1/2 Cup Parmesan Cheese, finely grated
  • 3 TBSP Lemon Juice
  • 1 TBSP Olive Oil
  • 1 LB Ground Beef
  • 4 Hamburger Buns
  • 1 Head Romaine Lettuce, leaves chopped

Let’s Get Cooking

Grab your food processor and dump the tin of anchovies and the water in, blend into a paste.

In a small bowl, combine 3 TSP of the anchovy paste + garlic + mustard + Worchestershire + mayo + parmesan + lemon juice + olive oil. Set aside, I let mine sit for about 3 hours in the fridge, you don’t have to let yours sit that long!

Mix the remainder of the anchovy paste in with the beef and form 4 patties. Season both sides with salt & pepper and cook the burgers according to your desired doneness.

BUILD YOUR BURGER: Bottom bun, chopped romaine, burger, Caesar dressing, top bun.

Texas Chainsaw Massa-Curd Burger

IT’S HALLOWEEN, cue the bats and the ‘Ghost Busters’ Theme song. It’s been a little while since I did a Bob’s Burger recipe and I thought it was fitting due to mine & Linda’s love of the holiday. This burger has everything you need, cheese, HEAT, and homemade ketchup. There is also that added element of fear when cutting up fresh habanero’s. As a warning, PLEASE be careful with habanero’s if you have rubber gloves please do use them and wash your hands, cutting board, and knife immediately after touching them. This is not an exaggeration, those buggers will ruin your day in a SECOND. With that being said, let’s get into it.

Ingredients

  • 1 Medium White Onion, chopped
  • Olive Oil
  • 1/2 Cup Minced Fresh Ginger
  • 3 Cloves Garlic, minced
  • 1/2 Cup Red Wine Vinegar
  • 1/2 Cup Brown Sugar
  • 28 oz. Can Crushed Tomatoes
  • 1 LBS Ground Beef
  • 4 Habaneros, or to taste, stemmed, seeded, and chopped
  • 2 Cups Fresh Cheese Curds
  • Boston Leafe Lettuce
  • 4 Burger Buns

Let’s Get Cookin’

Saute the chopped onion in a large pan with some olive oil over MED-HIGH heat, just until they get soft. Turn heat to low, and add in ginger + garlic, cook until the onions are translucent.

Turn the heat back up to MED-HIGH and add vinegar + brown sugar, stir until the sugar is dissolved. Add in the tomatoes and simmer for 30 min, add in salt + pepper. WOW YOU’RE AMAZING YOU JUST MADE KETCHUP. You can blend it if you prefer it smoother, just wait until it cools to do so.

Without touching absolutely anything on your body, mix in the chopped habaneros with the beef and form 4 patties. WASH YOUR HANDS ASAP. Season both sides with salt + pepper and wash your hands again.

Cook the patties to your liking, I do about 6 minutes each side on a hot skillet for Med-Rare. Right before the burgers are done, top with the cheese curds and cover so they get all melty.

Build the burger: Bottom bun, lettuce, burger with melty cheese curds, LOTS of homemade ketchup & top bun.

The book mentions you need to turn to your guests and say this before taking a bite: “Has it oc-curd to you that you’re about to eat one of the best meals of your lives?”

Amazing I know, now go enjoy this spicy burger, that actually is extremely balanced with the cheese and ketcup.

HAPPY HALLOWEEN,

Hannah

“One Horse Open Slaw” Burger

Creative burgers may just be my favorite food trend, although I am not even sure if you could consider it a trend. Burgers are a classic, so why not switch them up a little but! This is a perfect summer burger from the Bob’s Burger Cookbook of course. I hope that you’ll give it a try the next time your craving a burger.

Ingredients

  • 1 Egg Yolk
  • 1/2 TSP Salt
  • 1/2 TSP Yellow Mustard
  • 2 TSP Lemon Juice
  • 1 TBSP Red Wine Vinegar
  • 1 Cup Canola Oil
  • 1/4 Head Red Cabbage, shredded
  • 1/4 Head Green Cabbage, shredded
  • 3 Big Carrots, thinly sliced into matchsticks
  • 2 TBSP Worcestershire Sauce
  • 1 LB Ground Beef
  • 4 Slices Jalapeño Havarti Cheese
  • 4 Onion buns, or whatever you have

Let’s Get Cooking

We are going to start with the mayo that goes on the coleslaw!

In a large bowl whisk together egg yolk + salt + mustard. In another bowl mix together lemon juice + vinegar.

Add half of the lemon mixture in with the egg yolk mixture & whisk briskly.

While you’re still whisking, slowly, a few drops at a time, add in the oil. KEEP WHISKING. When the mixture beings to thicken you can add in the oil a little faster. Once half of the oil is whisked in, add the rest of the lemon mixture. KEEP WHISKING. Add the rest of the oil and whisk until the mayo is glossy. It will be a little bit thinner than store-bought mayo but that’s okay! Be proud of yourself, you just made homemade mayo!

To make the coleslaw: slice up the cabbage and carrots.

In a large bowl, place the cabbage + carrots + however much mayo you prefer. I like a thin coat, but that’s all up to you! Add in salt & pepper to taste.

For the burgers:

Mix in the Worcestershire sauce in with the ground beef. Don’t over mix!

Form the burgers into patties and cook them to your desired doneness. I usually do about 6 minutes per side for a med-rare.

Add on the cheese and cover to melt.

Build your burger up staring with bottom bun + cheeseburger + coleslaw + and a top bun!

“Chèvre Which Way but Loose Burger”

  • 1 tsp Chopped Fresh Sage
  • 2 tsp Chopped Fresh Oregano

  • 1 tsp Chopped Fresh Rosemary
  • 1/4 Cup Mayo
  • 1 English Cucumber, half of it finely sliced, the other half diced
  • 2 Tomatoes, seeded & finely diced
  • 2 Garlic Cloves, minced
  • 1 lb Ground Beef
  • 4 Vienna rolls, or any hamburger buns
  • 1/2 Red Onion, sliced

Let’s Get Cooking

Mix goat cheese + herbs + mayo. Mix until it has a cream cheesy consistency. Add in 1/4 cup of diced cucumber + tomatoes.

Add garlic into the ground beef and form into 4 patties. Season the patties with salt + pepper.

Cook burgers on a hot skillet until desired doneness. I prefer med-rare but do your thing!

BUILD YOUR BURGER: start with the bottom bun + burger + goat cheese spread + sliced red onion + sliced cucumber + top bun

This burger gets a little messy but trust me it’s totally worth it. The goat cheese spread is also an awesome leftover on a pita!

“Do the Brussel”

The things that I always reach for when I am feeling down is cartoons and food. It’s only fitting that one of my favorite cartoons is Bob’s Burgers. I have the cookbook based off the show and it has some of the best burgers out there! So due to us being stuck inside and down in the dumps I thought I would share one of my new favorites from the cookbook!

Ingredients

  • 1/2 lbs Bacon
  • 1 lbs Ground Beef
  • 1/3 lbs Brussel Sprouts, thinly sliced
  • 1/4 cup Shelled Pistachios, roughly chopped
  • 4 Buns
  • Green Leaf Lettuce
  • Sour Cream

Let’s Get Cooking

Cook the bacon on the store in a large frying pan over low heat. Cook bacon until it’s crispy (But not too crispy). I diced up the bacon but you can also keep it in full strips.

While bacon is cooking, thinly slice the brussel sprouts and chop the pistachios.

Remove bacon from the pan and throw the sliced brussel sprouts into the bacon fat. Increase the heat to medium high.

As the sprouts start to brown, add the pistachios and stir. Remove from heat and set aside.

Season beef with salt and pepper. Form patties and cook burgers in the same pan to desire doneness, I prefer medium-rare but you do you.

Let’s plate

To build the burger I recommend following the Bob’s Burgers Cookbook to a T. This is how to build your burgerss:

Bottom bun, Lettuce, Burger, Bacon, Brussel Sprout mixture, sour cream, and top bun.

The whole family loved this burger, personally, the sour cream just tied it all together. You also don’t feel so bad about eating a giant burger when there are some brussel sprouts on it!

The burger also goes amazingly well with homemade fries, which are coming in a blog post soon!

Let me know if you try this burger out and what you think! If they go well I am happy to share more of the amazing recipes.
